Super Soups.

Lentil, Bacon and Frankfurter Soup

 

You will need:

1 onion, finely chopped

8 rashers of smoked streaky bacon, finely diced

8 frankfurter sausages, chopped into ½ inch pieces

3 sticks of celery, finely chopped

2 carrots, finely chopped

3 cloves of garlic, finely chopped

2 pints of chicken stock

1 large tin of green lentils.

Salt and pepper to taste

Serves four

1) Start by frying the bacon until crispy. Set aside until a little later.

2) Now fry the onion, celery and carrots for 5 – 7 minutes until soft. Then add the garlic and fry for another 2 minutes.

3) Add 2 pints of chicken stock, the bacon and the tin of green lentils and simmer gently for 10 – 15 minutes until the vegetables are soft

4) Finally, add the pieces of chopped frankfurters and gently warm through for 10 minutes.

5) Serve with warm crusty bread for the perfect winter comfort food.
